Vegan Lettuce Wraps

These vegan lettuce wraps deliver great flavor and nutrition and are so easy to make!

Ingredients:

  • 1 garlic clove
  •  small piece fresh ginger
  • 1 head of lettuce
  • 1/4 cup peanuts, finely chopped
  • 1/2 cup peanut butter
  • 1/3 cup soy sauce
  • 4 oz. cup brown rice noodles
  • 2 Tbsp. chili paste
  • 2 Tbsp. sugar
  • 1 container tofu, diced into 1/2 inch cubes
  • 1/4 cup rice vinegar
  • 1/3 cup sesame oil

Instructions:

  1. Place garlic, ginger, peanut butter, soy sauce, chili paste, rice vinegar and sugar in a food process. Process until smooth.
  2. In a saucepan, heat sesame oil and add tofu. Cook until browned, turning pieces as necessary. Add some peanut sauce and combine with tofu. Set aside.
  3. To the saucepan, add the noodles and peanut sauce mixture, stirring to combine while heating.
  4. Place noodles in a lettuce leaf, followed by tofu, a drizzle of peanut sauce and a sprinkle of peanuts.

Optional: add chopped chives on top, if desired.
