Vegan Lettuce Wraps
These vegan lettuce wraps deliver great flavor and nutrition and are so easy to make!
Ingredients:
- 1 garlic clove
- small piece fresh ginger
- 1 head of lettuce
- 1/4 cup peanuts, finely chopped
- 1/2 cup peanut butter
- 1/3 cup soy sauce
- 4 oz. cup brown rice noodles
- 2 Tbsp. chili paste
- 2 Tbsp. sugar
- 1 container tofu, diced into 1/2 inch cubes
- 1/4 cup rice vinegar
- 1/3 cup sesame oil
Instructions:
- Place garlic, ginger, peanut butter, soy sauce, chili paste, rice vinegar and sugar in a food process. Process until smooth.
- In a saucepan, heat sesame oil and add tofu. Cook until browned, turning pieces as necessary. Add some peanut sauce and combine with tofu. Set aside.
- To the saucepan, add the noodles and peanut sauce mixture, stirring to combine while heating.
- Place noodles in a lettuce leaf, followed by tofu, a drizzle of peanut sauce and a sprinkle of peanuts.
Optional: add chopped chives on top, if desired.
