Theresa’s Tomato Sauce

This tomato sauce recipe delivers the flavor every other must live up to!

2 green peppers, chopped
1 large onion, chopped
Olive oil, to taste
3 24-oz. cans crushed tomatoes
3 24-oz. cans tomato puree’
1 can condensed tomato paste
1 lb. sweet Italian sausage
1 package country ribs
1 cup white or red wine
1 tsp salt
1 tsp black pepper
1 tsp red pepper flakes
1 tsp parsley
1 tsp oregano
1 tsp basil
½ cup grated Romano cheese
Cloves of 1 garlic, peeled and finely chopped

 

  1. In a large pot, sauté’ green pepper and onions until soft. Place in a food processor and blend until smooth. Return puree’ to the same pot.
  2. Add crushed tomatoes, tomato puree’, condensed tomato paste, sausage, country ribs, wine, salt, black pepper, red pepper flakes, parsley, oregano, basil and Romano cheese.
  3. Cook on the lowest flame for 4-5 hours or until the meat falls off the bone. At this time, you will see oil rise to the top of the pot, coming from the meat.
  4. Saute’ garlic and olive oil until brown. Stir into sauce and allow to cook for the last hour.
  5. Add additional seasonings as necessary, according to taste.

(Note: The garlic is added at the end as the flavor tends to diminish after many hours of cooking).
