Summer Vegetable Bowl

Ingredients

  • Butternut Squash Spirals
  • Brussel Sprouts
  • Red Potatoes
  • Broccoli Slaw
  • 2 tsp pepper
  • Watermelon Radish

Dressing

  • Mayonnaise
  • Siracha
  • Fresh Lime Juice
  • Fresh Cilantro

 

The recipe has 5 easy steps:

  1. Roast or Air Fry the Potatoes, Brussel Sprouts and Spiral Squash: Cut the Potatoes and Brussels sprouts, add them to Spiral Squash and toss them in coconut oil, salt, and pepper, and roast them in a 400ºF oven for 25-30 minutes and cook in Air Fryer until tender.

*Reserve outside leaves of Brussel sprouts to make “chips” in the air fryer for topping.

 

  1. Prepare Dressing: Mix 1 cup of mayonnaise, 1 tsp Siracha, 1tbs Fresh Lime Juice, ½ cup Cilantro

 

  1. Prepare the Slaw: Dress the Broccoli Slaw with Apple Cider Vinegar, save for topping.

 

  1. Prepare Radish: Finely Slice Watermelon Radish for topping.

 

  1. Assemble Summer Vegetable Bowl: Arrange Potatoes, Brussel Sprouts and Spiral Squash. Cover with the prepared Broccoli Slaw. Top with Watermelon Radish. Finish with Cilantro Dressing.
