Sausage and Peppers

In every Italian household, sausage and peppers is a staple dinner course meal. If you don’t already have a favorite recipe, this one just might be it!

Ingredients:

  • 1 lb. sweet Italian sausage
  • 6 cloves garlic, crushed
  • 1/4 cup olive oil
  • 1 large onion, diced
  • 3 green or red peppers, diced
  • salt and pepper to taste
  • 1 tsp. red pepper flakes
  • 1 tsp. oregano
  • 1 tsp. parsley
  • 1 tsp. basil
  • 1/2 cup. white or red wine
  • 1 beef bullion cube
  • 1/4 cup. grated romano cheese
  1. Add olive oil to a large saucepan. Place sausage in oil and heat on high until sausage browns. Turn sausage to brown on all sides.
  2. Remove sausage from pan and place on cutting board. When cool enough to handle, slice sausage into 1/2 inch pieces.
  3. While sausage is on cutting board, sautee’ garlic until brown. Add peppers and onions, salt and pepper. Cover with lid for 5 minutes.
  4. Stir peppers. Return sausage to the pan.
  5. Add spices, wine and bullion cube.
  6. Cook until sausage is thoroughly cooked and no pink appears in meat, about 20 minutes.
  7. Add romano cheese. Serve over rice or pasta, if desired.
