Sausage and Peppers
In every Italian household, sausage and peppers is a staple dinner course meal. If you don’t already have a favorite recipe, this one just might be it!
Ingredients:
- 1 lb. sweet Italian sausage
- 6 cloves garlic, crushed
- 1/4 cup olive oil
- 1 large onion, diced
- 3 green or red peppers, diced
- salt and pepper to taste
- 1 tsp. red pepper flakes
- 1 tsp. oregano
- 1 tsp. parsley
- 1 tsp. basil
- 1/2 cup. white or red wine
- 1 beef bullion cube
- 1/4 cup. grated romano cheese
- Add olive oil to a large saucepan. Place sausage in oil and heat on high until sausage browns. Turn sausage to brown on all sides.
- Remove sausage from pan and place on cutting board. When cool enough to handle, slice sausage into 1/2 inch pieces.
- While sausage is on cutting board, sautee’ garlic until brown. Add peppers and onions, salt and pepper. Cover with lid for 5 minutes.
- Stir peppers. Return sausage to the pan.
- Add spices, wine and bullion cube.
- Cook until sausage is thoroughly cooked and no pink appears in meat, about 20 minutes.
- Add romano cheese. Serve over rice or pasta, if desired.
