Potatoes Au Gratin
Potatoes au gratin is a favorite holiday dish, but delicious year-round. It makes the perfect compliment to any meat dish with it’s comforting, creamy texture and homemade flavors.
Ingredients:
- 5 lbs. potatoes
- 2 onions, diced
- olive oil
- 1/4 cup all-purpose flour
- salt
- pepper
- oregano
- parsley
- red pepper flakes (optional)
- 1 cup broth
- 1 cup heavy cream
- 2 cups grated cheese of choice such as monterey jack
- bread crumbs
Steps:
- Preheat oven to 450 degrees Fahrenheit.
- Peel pototoes and place them in a pot of water. (This will prevent them from turning black).
- Use the long cuts on a grater or a mandolin to slice potatoes thinly. (They should be transparent). Return pototoes to pot of water.
- Saute’ onions in olive oil until transparent.
- Add a tablespoon of olive oil to the bottom of a large roasting pan and spread to prevent sticking.
- Add a layer of potatoes to the bottom of the pan. Lightly dust with flour. Shake salt, pepper, oregano, parsley and pepper flakes on top of flour.
- Spread a layer of onions on top, followed by a cup of grated cheese.
- Repeat the above process until all potatoes are in the pan.
- Sprinkle bread crumbs on top of potatoes, covering the top evenly.
- Cover potatoes with foil and bake for 1/2 hour.
- Add broth and cream to potatoes and bake an additional half hour.
- Use a fork to test for doneness. When potatoes are soft, remove the foil and broil for 5 minutes or until the bread crumbs are browned.
Serves 12 – 15.
