Italian Baked Cauliflower

INGREDIENTS:
1 cauliflower
1-1/2 c. Panko bread crumbs
1 onion
1/4 c. + 2 Tbsp. olive oil
2 broth cubes
1/2 c. Romano cheese
Salt
Pepper
Basil
Oregano

  • Remove the cauliflower stem and chop cauliflower into florets. Rinse in colander.
  • Add 2 chicken broth cubes to a pot of water and bring to a boil.
  • Cook cauliflower in water for about 10 minutes. Reserve 1/4 c. water and drain cauliflower. Place cauliflower in pan with reserved water.
  • Chop onion and saute in 2 Tbsp. olive oil over high heat until translucent.
  • Combine panko bread crumbs with salt, pepper, basil, oregano, Romano cheese and 1/4 c. olive oil.
  • Spoon onions over cauliflower. Top with panko bread crumb mixture. Cover with aluminum foil.
  • Bake for 30 minutes at 350 degrees F. Remove foil for last 10 minutes of cooking to brown panko crumbs.
