Ice Cream Pie

Ice cream pie is easy-to-make and a sure winner with the kids, especially on those hot summer days. This recipe combines crushed cookies, ice cream and your favorite toppings.

Ingredients:

  • 2 Packages Chocolate Cookies (Archway)
  • 1 stick butter, melted
  • 1 pint each of Hagen Daz ice cream: chocolate, vanilla, tiramisu’ (or other flavor of your preference)
  • Hershey Milk Chocolate English Toffee Bits
  • Chocolate Magic Shell
  • Chocolate Fudge
  • Chocolate Sprinkles
  • Nuts (optional)
  • Shredded coconut (optional)
  • Caramel syrup
  1.  Place chocolate cookies in a food processor and process until the cookies are chopped into small crumbs.
  2.  Add melted butter to chopped cookies and process until blended.
  3.  Pour cookie mixture into a pie pan. Press evenly on the bottom and up the sides. Place pie pan in freezer for 10 minutes to firm. Take the first ice cream flavor out of the freezer to soften up.
  4. When the first ice cream flavor is soft enough to scoop easily, remove pie pan from freezer and fill the pie pan with ice cream, about one-third of the way up. Spread ice cream evenly in bottom of pie crust using a spatula.
  5. Return the pie pan to the freezer until the ice cream is firm to the touch.
  6.  Remove pie pan from freezer and spread an even coat of chocolate fudge on top of the ice cream. Return to freezer for 10 minutes. Remove the next ice cream flavor from the freezer to soften.
  7. Spread the second ice cream flavor on top of the chocolate fudge, filling the pie pan to two-thirds full. Return to freezer.
  8. When the second flavor is firm to the touch, spread caramel syrup evenly across the top. Return to freezer and take the last ice cream flavor out to thaw.
  9. Spread the last flavor on top of the caramel syrup, heaping the ice cream above the rim of the pie pan. (Ice cream will mound in the middle and meet the cookie crust at the edge. Place in freezer until firm.
  10. When the ice cream has hardened, drizzle chocolate syrup back and forth across the top of the pie. Repeat with caramel and then magic shell.
  11. Decorate top of ice cream pie with chocolate sprinkles, coconut and nuts, if desired.
