Grilled Italian Veal Rolls

Grilled veal rolls offer the sensational flavors of Italian cooking on the grill. Thin veal cutlets are stuffed with provolone and prosciutto.

Ingredients:

3 lbs. thinly sliced veal cutlets
10 – 12 thin slices provolone cheese
1 cup white wine
10 – 12 thin prosciutto slices
salt and pepper to taste
olive oil

1. Butterfly each veal cutlet and pound out to 1/8″ thick between two sheets of plastic or wax paper.
2. Place pounded veal in a pan and add wine. Allow to marinate for at least 1 hour.
3. Remove veal from wine and pat dry with paper towels.
4. On top of each veal cutlet, add one slice provolone and one slice prosciutto.
5. Roll up cutlet on the short side and secure with a few toothpicks.
6. Brush the outside with olive oil. Sprinkle with salt and pepper to taste.
7. Cook on grill, turning to get grill marks on all sides. Total cooking time should be 8-10 minutes on medium heat.
