Cream Puffs

Cream puffs are always a delightful dessert for the holiday season. These are a tad festive for the New Year!

Ingredients:

Pastry

  • 1 c. water
  • 1 stick butter, unsalted
  • 1/2 tsp. salt
  • 1-1/2 tsp. sugar
  • 1 c. flour
  • 4 eggs

Filling

  • 2 c. heavy cream
  • 2 Tbsp. granulated sugar
  • 1/4 tsp. vanilla

Optional:

  • 1 c. melted chocolate chips
  • red and green sprinkles

Instructions:

  1. Preheat oven to 450 degrees F.
  2. Combine water, butter, salt and sugar in a pan. Bring to a boil. Remove from heat and continue stirring.
  3. Stir in flour until evenly combined. Return pan to heat for 30 seconds.
  4. Transfer dough to a mixer fitted with the paddle attachment. Turn on low and add one egg at a time until 3 eggs are combined.
  5. Place dough in a pastry bag. Pipe 2 inch balls onto a greased baking sheet.
  6. Add a bit of water to the 4th egg and brush the pastry to smooth over the points.
  7. Bake 15 minutes. Lower heat to 375 and cook another 20 minutes or until lightly browned.
  8. Allow cream puffs to cool on baking sheet.
  9. Whip cream, sugar and vanilla until firm peaks are formed. Place whipped cream in another piping bag.
  10. Poke holes into the sides of the cream puffs and fill with whipped cream.

Optional:

Drizzle cream puffs with melted chocolate and then shake sprinkles on top.
