Chocolate Peanut Butter Balls
Chocolate peanut butter balls are a kids favorite not only because they combine two beloved ingredients, chocolate and peanut butter, but also because the ingredients are always handy to make at a moment’s notice. These are sure to become your family’s go-to whenever a sweet tooth kicks in.
Ingredients:
1 cup smooth peanut butter
1 cup softened butter
1 teaspoon vanilla
2 lbs. confectioners sugar
1/4 cup milk
2 cups milk chocolate chips, melted
1 tsp. vegetable shortening
- Place peanut butter and butter in the bowl of a mixer and beat on medium speed until blended.
- Add vanilla and confectioners sugar. Blend on low until the sugar has combined with the peanut butter mixture.
- Add milk and beat on medium speed for 2 minutes. Scrape down bowl. Beat another 3-5 minutes or until well blended and no lumps appear.
- Using a tablespoon, scoop out peanut butter mixture and roll into a ball in the palm of your hands. Each ball will be about one inch thick.
- Place peanut butter balls on wax or parchment paper set on top of a baking sheet.
- Place balls in refrigerator to firm.
- Microwave chocolate chips and shortening in a microwave-safe bowl at 30 second intervals until melted, stirring in between.
- Remove peanut butter balls from refrigerator and roll each one in melted chocolate, placing it back on the wax or parchment paper.
- Place chocolate covered peanut butter balls back in refrigerator until chocolate hardens, about 10 minutes.
Makes 25 – 30 balls.
