Chili Grilled Chicken

Here’s a quick summer dish with lots of zest. Chili grilled chicken combines bold spicy flavors for a flavorful kick.

Ingredients:

2 lbs. chicken breast cutlets, filleted and pounded to 1/4 inch thick
Olive oil
1 tsp. chili powder
1 tsp. salt
1 tsp. black pepper
1 tsp. cumin
1 tsp. paprika
1 tsp. garlic powder
1 tsp. basil
1 tsp. oregano

  1. Preheat barbecue grill.
  2. Brush both sides of chicken cutlets with olive oil.
  3. Combine spices in a small bowl.
  4. Sprinkle spices generously over chicken cutlets.
  5. Cook chicken on high heat for 2-3 minutes per side.

Serves 8.
