Asparagus Au Gratin

March is the season for asparagus and asparagus au gratin is a fantastic way to enjoy this springtime vegetable. Elegant enough to accompany a holiday meal, the recipe requires just a few ingredients.

Ingredients:

1 lb. fresh asparagus
olive oil
8 cloves garlic, finely chopped
½ cup seasoned bread crumbs
½ cup grated romano cheese
Salt & pepper, to taste
Oregano
Parsley

  1. Trim the woody stems from the asparagus. This may be one inch or more.
  2. Place asparagus in the top of a double boiler with one-inch water on the bottom. Heat until asparagus are al dente. Set aside.
  3. Sautee garlic in olive oil until lightly browned. Stir in bread crumbs and continue heating until light golden brown.
  4. In the bottom of a shallow dish, add a little bit of olive oil. Place a row of asparagus on top. Spoon garlic and bread crumb mixture on top. Sprinkle with salt, pepper, oregano and parsley. Repeat this step with all the asparagus.
  5. Sprinkle romano cheese on top.
  6. Cover dish with aluminum foil. Bake in oven at 350 degrees F for about 30 minutes. Remove foil and place under broiler for 2-3 minutes to brown the top, watching carefully not to burn the cheese.
