Asparagus Au Gratin
March is the season for asparagus and asparagus au gratin is a fantastic way to enjoy this springtime vegetable. Elegant enough to accompany a holiday meal, the recipe requires just a few ingredients.
Ingredients:
1 lb. fresh asparagus
olive oil
8 cloves garlic, finely chopped
½ cup seasoned bread crumbs
½ cup grated romano cheese
Salt & pepper, to taste
Oregano
Parsley
- Trim the woody stems from the asparagus. This may be one inch or more.
- Place asparagus in the top of a double boiler with one-inch water on the bottom. Heat until asparagus are al dente. Set aside.
- Sautee garlic in olive oil until lightly browned. Stir in bread crumbs and continue heating until light golden brown.
- In the bottom of a shallow dish, add a little bit of olive oil. Place a row of asparagus on top. Spoon garlic and bread crumb mixture on top. Sprinkle with salt, pepper, oregano and parsley. Repeat this step with all the asparagus.
- Sprinkle romano cheese on top.
- Cover dish with aluminum foil. Bake in oven at 350 degrees F for about 30 minutes. Remove foil and place under broiler for 2-3 minutes to brown the top, watching carefully not to burn the cheese.
