Kahlua Valentines Truffles

Kahlua Valentines Truffles combine a creamy, chocolate center with the smooth flavor of Kahlua and are finished with a hard chocolate exterior. The perfect gift for any valentine!

Ingredients:
2-1/4 c. semisweet chocolate chips
1 c. heavy cream
5 Tbsp. butter
2 Tbsp. Kahlua liquor
Dark, white and red chocolate candy melts
Cocoa powder
Colored sprinkles
Preparation:

    • Place heavy cream in a saucepan and bring to a low simmer.
    • Place chocolate chips in a separate bowl.
    • Remove cream from heat and stir in butter and Kahlua. Pour cream mixture over chocolate and allow to sit 5 minutes or until chocolate is completely melted.
    • Stir chocolate and cream together until entirely smooth. Cover bowl with plastic wrap and place in refrigerator to chill until firm, about 4 hours.
    • Once, chocolate mixture (ganache) is firm, use a spoon to scoop it out and create one-inch balls. Dust your hands with cocoa powder and roll the ganache to create smooth truffle balls.
    • Place truffles on a cookie tray covered with parchment paper and place the pan in the refrigerator.
    • Place dark chocolate melts in a microwavable cup or bowl and heat on high for one minute. Stir chocolate. If more melting is needed, return to microwave for 30 second intervals. Chocolate will continue to melt as you stir. Be careful not to overheat as the chocolate will seize and need to be discarded.
    • Using either a spoon or fork, place truffles into melted chocolate one at a time and roll them until covered. Return dipped truffles to cookie sheet.
    • Melt red and white chocolate in separate containers and decorate as desired. Chocolate can be placed into a parchment cone, plastic piping bag or a plastic baggie (with a small cut made on one corner). When decorating, melt small amounts of chocolate at a time as it will cool quickly and you will not be able to squeeze it out of the bag once it cools. You can decorate all of them the same or create an eclectic mix, as shown.
