Cole Slaw with a Kick
This homemade cole slaw has lots of flavor thanks to mustard and chipotle mayonnaise. It’s a great BBQ side dish throughout the warm weather season.
2 bags cole slaw mix (cabbage, shredded carrots)
1 teaspoon finely chopped garlic
2 tsp. onion flakes
2 tsp. white vinegar
¼ cup dark brown sugar
1 teaspoon paprika
½ teaspoon ground red pepper
1 teaspoon salt
1 teaspoon black pepper
2 teaspoons horseradish mustard
1 teaspoon parsley
1/3 cup chipotle mayonnaise
In a large bowl, combine all ingredients except for the mayonnaise. Allow to sit for 15 minutes so water begins to come out of the cabbage. (This will result in needing less mayonnaise to make the cole slaw moist).
Add mayonnaise and chill until ready to serve.
1 32-oz. jar mayonnaise
2 adobe peppers + 2 Tbsp. liquid from can
juice of ½ lime
Combine 1 jar mayonnaise, adobe peppers, adobe pepper liquid and lime in a food processor and blend until smooth.
Serves 12 – 15
